Strawberry jam cookies

  • 250g of flour
  • 30g of almond powder
  • 150g of butter
  • 50g of sugar
  • 1 egg yolk
  • Strawberry jam


Stage 1

Cut the butter into cubes.

Stage 2

Put the flour and sugar in a bowl and mix with your fingertips. Add the butter. Mix without overworking the dough.

Stage 3

Add the egg yolk. Mix.

Stage 4

Cover the dough and refrigerate for 1 hour.

Stage 5

On a floured work surface, roll out the dough. Using a round fluted cookie cutter, shape the biscuits. Arrange them on a baking tray.

Stage 6

Use a fork to poke holes in the biscuits. Return the tray to the refrigerator for 15 minutes to prevent the biscuits from moving during baking.

Stage 7

Preheat the oven to 180°c.

Stage 8

Bake for about 12 minutes.

Stage 9

Once the biscuits have cooled, place a small spoonful of strawberry jam on top and close with another biscuit.
